Creamy Lemon-Dill Salmon Pasta

Ingredients
  

  • 2 salmon fillets
  • 200 g spaghetti or linguine
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 cup heavy cream
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh dill chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the Salmon: Season the salmon fillets with salt and pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Place the salmon fillets skin-side down and cook for 4-5 minutes on each side or until fully cooked through. Once cooked, remove from the skillet and flake the salmon into large chunks. Set aside.
  • Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Make the Sauce: In the same skillet used for the salmon, add another tablespoon of olive oil and sauté the minced garlic until fragrant. Pour in the heavy cream, lemon zest, and lemon juice. Stir and let it simmer for 2-3 minutes.
  • Combine: Add the flaked salmon and cooked pasta to the skillet. Toss everything together, ensuring the pasta is well-coated with the creamy sauce.
  • Final Touches: Stir in the fresh dill and grated Parmesan cheese. Season with additional salt and pepper if needed.
  • Serve: Plate the creamy lemon-dill salmon pasta, garnish with fresh parsley, and enjoy!
